Asian cucumber salad in a transparent bowl

Fresh, bold, a little spicy—this Asian cucumber salad instantly livens up Kitty's chaotic kitchen. Every bite is a little explosion of flavor that tickles the palate. And as the bowl empties, Kitty thinks: This is exactly what salad should be—uncomplicated yet still a little adventure.

Ingredients

  • 8 mini cucumbers

  • 1 garlic clove

  • 1 organic lemon

  • 2 tbsp sesame oil

  • 3 tbsp soy sauce

  • A pinch of chili powder

  • 1 tbsp sugar

  • 2 tbsp sesame seeds


preparation

  1. Wash the cucumbers.

  2. Place each cucumber between two chopsticks and then cut into diagonal slices so that they are still connected at the bottom.

  3. Turn the cucumbers over and cut them diagonally again so that the cucumbers are slightly fanned out but still hold together.

  4. Peel the garlic and chop finely.

  5. Halve the lemon and squeeze out the juice.

  6. In a bowl, combine the sesame oil, soy sauce, 2 tablespoons of lemon juice, chopped garlic, chili powder, and sugar.

  7. Mix the cucumbers with the dressing and let it sit for about 10 minutes.

  8. Sprinkle with sesame seeds and serve.
