Asparagus mozzarella salad

Asparagus mozzarella salad – sounds like a fancy dish, but things are different in Kitty's kitchen: Asparagus flies, mozzarella balls swirls, and the dressing ends up everywhere but where it's supposed to. The end result? A salad that acts like it's fine company, but is actually pure chaos with a punch.
Ingredients
500 g green asparagus
250 g mini mozzarella
250 g cherry tomatoes
50 g cashew nuts
3 spring onions
5 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp balsamic cream
1 tbsp maple syrup
Salt & Pepper
preparation
Peel the green asparagus and cut into bite-sized pieces.
Cook the asparagus pieces for 5 minutes, then drain the cooking water and let the asparagus cool.
Briefly roast the cashews in a pan without fat until they are lightly browned.
Halve the cherry tomatoes and mini mozzarella.
Cut the spring onions into fine rings.
Place all prepared ingredients in a large bowl.
In a separate small bowl, mix olive oil, balsamic vinegar, balsamic crema and maple syrup.
Season with salt and pepper.
Pour the vinaigrette over the salad and mix everything well.
Taste the salad again before serving and add more seasoning if desired.
Tip: As an alternative to cashews, you can use cedar nuts or sunflower seeds.
