Beetroot and orange salad

Kitty actually just wanted to quickly make some sandwiches. But suddenly, beets and oranges appeared in front of her, conspiring together, and voila – the salad was born, as if the ingredients had secretly changed the plan. She looks at the colorful chaos on the plate, takes a bite, and thinks: I have no idea how I ended up here, but it tastes absolutely fantastic.

Ingredients

  • 500 g cooked beetroot, cut into fine strips

  • 2 oranges, peeled and thinly sliced

  • 150 g feta, diced

  • 1/2 red onion, finely chopped

  • 1 tbsp chopped chives

  • 2 handfuls of spinach leaves


For the dressing:

  • 30 ml olive oil

  • 1 tsp honey

  • 1 tbsp white wine vinegar

  • 1 garlic clove, finely chopped

  • Salt and pepper to taste


preparation

  1. Place all ingredients in a large bowl.

  2. Prepare the dressing in a separate bowl.

  3. Pour the dressing evenly over the ingredients and mix


Enjoy this colorful and flavorful salad as a refreshing starter or as a light main course.
