Bread with baked tomatoes and burrata

Kitty actually just wanted to make a sandwich, a perfectly harmless thing. But then the baked tomatoes arrived, warm, sweet, and sassy, and the burrata drizzle over them like a creamy little drama. Kitty bit into it, the kitchen remained reverently silent, and she thought: I just wanted bread—now I'm eating pure temptation on a slice.
Ingredients
Mixed wheat bread:
400 g wheat flour type 550
250 g rye flour type 1150
100 g spelt flour type 630
500 g lukewarm water
1/2 cube of yeast
1 tbsp salt
1 teaspoon sugar
Aside from that:
Cast iron pot with lid
Baked tomatoes:
500 g small tomatoes
4-6 cloves of garlic
thyme
olive oil
Salt & Pepper
3 Burrata
preparation
Pour the flour into a bowl
Dissolve yeast with 100 g water and the sugar
Add to the flour in the bowl
Dissolve salt in the remaining water
Pour into the bowl
Knead all ingredients with a mixer for 5 minutes
Cover the bowl
Let rise for 1 hour
Place the dough on a floured work surface (dough is very sticky)
Fold 10 times (use some flour for your hands)
Form into a loaf
Line a cast iron pot with baking paper
Put in a loaf of bread
Put the lid on the pot
Bake in a cold oven at 240°C top/bottom heat for 50 minutes with the lid on
Then bake for 10 minutes without a lid
Place tomatoes and garlic in a casserole dish
Season with thyme, salt and pepper
Pour some olive oil over it
Reduce the oven to 220° C top/bottom heat
Bake for 20-30 minutes
Cut fresh bread into slices
Spread garlic on top
Pull the burrata apart and place it on the bread
Spread tomatoes on top
Pour some olive oil over it
Sprinkle some salt and pepper over it
Tip: If you like, you can fry the bread slices in a little butter.
