Bread with baked tomatoes and burrata

Kitty actually just wanted to make a sandwich, a perfectly harmless thing. But then the baked tomatoes arrived, warm, sweet, and sassy, and the burrata drizzle over them like a creamy little drama. Kitty bit into it, the kitchen remained reverently silent, and she thought: I just wanted bread—now I'm eating pure temptation on a slice.

Ingredients


Mixed wheat bread:

  • 400 g wheat flour type 550

  • 250 g rye flour type 1150

  • 100 g spelt flour type 630

  • 500 g lukewarm water

  • 1/2 cube of yeast

  • 1 tbsp salt

  • 1 teaspoon sugar

Aside from that:

  • Cast iron pot with lid


Baked tomatoes:

  • 500 g small tomatoes

  • 4-6 cloves of garlic

  • thyme

  • olive oil

  • Salt & Pepper

  • 3 Burrata

preparation

  1. Pour the flour into a bowl

  2. Dissolve yeast with 100 g water and the sugar

  3. Add to the flour in the bowl

  4. Dissolve salt in the remaining water

  5. Pour into the bowl

  6. Knead all ingredients with a mixer for 5 minutes

  7. Cover the bowl

  8. Let rise for 1 hour

  9. Place the dough on a floured work surface (dough is very sticky)

  10. Fold 10 times (use some flour for your hands)

  11. Form into a loaf

  12. Line a cast iron pot with baking paper

  13. Put in a loaf of bread

  14. Put the lid on the pot

  15. Bake in a cold oven at 240°C top/bottom heat for 50 minutes with the lid on

  16. Then bake for 10 minutes without a lid

  17. Place tomatoes and garlic in a casserole dish

  18. Season with thyme, salt and pepper

  19. Pour some olive oil over it

  20. Reduce the oven to 220° C top/bottom heat

  21. Bake for 20-30 minutes

  22. Cut fresh bread into slices

  23. Spread garlic on top

  24. Pull the burrata apart and place it on the bread

  25. Spread tomatoes on top

  26. Pour some olive oil over it

  27. Sprinkle some salt and pepper over it


Tip: If you like, you can fry the bread slices in a little butter.
