Kopytka with king oyster mushrooms

Kitty's dumplings slide around in the pan, the king oyster mushrooms join in as if they were the boss of this potato dumpling adventure. It sizzles, smells of butter and forest, and Kitty watches the spectacle as if she were hosting a culinary contest. One bite later, she thinks: I just wanted dumplings—now I have a mushroom party on my fork.
Ingredients
Kopytka
1 kg potatoes (preferably waxy)
300 g flour
50 g Polish potato flour (Mąka Ziemniaczana)
1 egg
some salt
1 tbsp butter
sauce
1 tbsp butter
3 onions
400 ml whipped cream
5-7 oyster mushrooms
15 small cherry tomatoes (optional)
1 bunch of parsley
salt and pepper
preparation

Peel potatoes and cook in a pot until soft
Then drain and mash while still warm
Dust a work surface with flour and place the lukewarm potato mixture on it
Make a hollow in the middle
Add egg, flour and potato flour
Knead by hand
If the dough sticks, add some flour
Divide the dough into four portions
Form each portion into a long, finger-thick roll of dough
Cut diagonal pieces of about 3 cm long from the roll
Bring water with some salt to a boil in a pot
Carefully place the kopytka into the boiling water
Cook in portions so that they do not stick together in the pot
As soon as they float to the surface, they can be removed with a skimmer
sauce
Finely dice the onions
Chop the oyster mushrooms into small pieces
Heat butter in a pan
Fry onions in it
Add oyster mushrooms
Fry for 3-4 minutes at high temperature
Reduce temperature to medium
Add tomatoes (optional)
Fry for another 3 minutes
Add whipped cream
Chop the parsley and add it
Simmer for 5 minutes at medium heat.
Season with salt and pepper
Add kopytka and mix with the sauce
