Kritharaki Salad

There it is, colorful, crisp, cheerful—the Kritharaki salad brings a summer feeling to Kitty's kitchen. Amidst all the colors and flavors, she briefly wonders whether this is just a side dish or the star of the show. One spoonful later, it's clear: This isn't a salad, it's a little vacation on your fork.
Ingredients
500 g Kritharaki noodles
200g feta
200 g olives
100 ml olive oil
1 red bell pepper
200 g cherry tomatoes
1 cucumber
3 spring onions
1 lemon
60 g cedar nuts or pine nuts
2 tbsp herbal vinegar
2 cloves of garlic
1 tsp mustard
1 tbsp oregano
salt and pepper
1 pinch of sugar
preparation
Cook the kritharaki noodles according to the instructions on the package.
Drain the cooking water and place the pasta in a large bowl.
Mix the pasta with a little olive oil.
Cut the feta, cucumber and peppers into small cubes.
Cut the spring onions into thin rings.
Halve the cherry tomatoes.
Add the olives.
Briefly roast the pine nuts in a pan without oil.
Mix everything well with the pasta.

Finely grate the lemon peel.
Squeeze the lemon.
Add olive oil, vinegar, garlic, oregano and mustard.
Season with salt and pepper.
Add some sugar.
Tip: This Greek salad tastes great as a side dish to grilled fish or meat.
