Moringa - Sweet Potato Soup

A scent rises from the pot, hovering somewhere between sweet potato warmth and green moringa magic. Kitty stirs, spills, tastes—and suddenly the soup tastes like a spa vacation and a little vegetable frenzy. She leans back, smiles, and thinks: I just wanted something warm, and now I've accidentally cooked myself some energy.
Ingredients
1 onion
2 cloves of garlic
2 carrots
2 stalks of celery
1 sweet potato
1 tsp turmeric
1 tsp cumin
1 tsp ground coriander
1 liter vegetable broth
1 tbsp moringa powder
1 can of coconut milk
Salt and pepper to taste
Juice of 1/2 - 1 lime, depending on taste
2 tbsp olive oil
preparation
Finely chop the onion and garlic cloves.
Heat the olive oil in a saucepan over medium heat and fry the chopped onion and garlic for about 2 minutes.
Peel the carrots and sweet potatoes and cut them into cubes.
Cut the celery into slices.
Add the chopped vegetables to the pot and fry for another 5 minutes.
Add turmeric, cumin and ground coriander and fry for another 1 minute to release the spices.
Pour the vegetable stock into the pot and bring the soup to a boil.
Reduce the heat and simmer the soup for about 30 minutes until the vegetables are tender.
Add the moringa powder and coconut milk and simmer for another 5 minutes to blend the flavors.
Briefly puree with a hand blender to make the soup creamy.
Season with lime juice, salt and pepper and add more seasoning if desired.
