Moringa - Sweet Potato Soup

Sweet potato soup in a green bowl

A scent rises from the pot, hovering somewhere between sweet potato warmth and green moringa magic. Kitty stirs, spills, tastes—and suddenly the soup tastes like a spa vacation and a little vegetable frenzy. She leans back, smiles, and thinks: I just wanted something warm, and now I've accidentally cooked myself some energy.

Ingredients

  • 1 onion

  • 2 cloves of garlic

  • 2 carrots

  • 2 stalks of celery

  • 1 sweet potato

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1 tsp ground coriander

  • 1 liter vegetable broth

  • 1 tbsp moringa powder

  • 1 can of coconut milk

  • Salt and pepper to taste

  • Juice of 1/2 - 1 lime, depending on taste

  • 2 tbsp olive oil

preparation

  1. Finely chop the onion and garlic cloves.

  2. Heat the olive oil in a saucepan over medium heat and fry the chopped onion and garlic for about 2 minutes.

  3. Peel the carrots and sweet potatoes and cut them into cubes.

  4. Cut the celery into slices.

  5. Add the chopped vegetables to the pot and fry for another 5 minutes.

  6. Add turmeric, cumin and ground coriander and fry for another 1 minute to release the spices.

  7. Pour the vegetable stock into the pot and bring the soup to a boil.

  8. Reduce the heat and simmer the soup for about 30 minutes until the vegetables are tender.

  9. Add the moringa powder and coconut milk and simmer for another 5 minutes to blend the flavors.

  10. Briefly puree with a hand blender to make the soup creamy.

  11. Season with lime juice, salt and pepper and add more seasoning if desired.
