Moroccan Bean Salad - L'foul Mchermel

A plate full of beans, seasoned, marinated, and so colorful that even Kitty has to pause for a moment. L'foul Mchermel tastes of sunshine, spiced dreams, and a hint of adventure. A spoonful, a grin, and Kitty thinks: I just wanted to snack, not travel halfway around the world.
Ingredients
2 cans of white beans, 800 g each (drained weight 480 g)
2 red onions, finely chopped
2 tbsp tomato paste
2 tbsp tahini
1 tbsp vegetable stock powder
1/2 tsp ground cumin
3 garlic cloves, finely chopped
1 handful of fresh coriander, finely chopped
1 handful of fresh parsley, finely chopped
olive oil
Salt and pepper to taste

Heat some olive oil in a pan and fry the finely chopped onions until they become translucent.
Add the finely chopped garlic and fry it together with the onions until fragrant.
Add the tomato paste and tahini and mix well to create a creamy mixture.
Add the vegetable stock powder and ground cumin to the mixture and stir well to release the flavors.
Drain the beans slightly and then add them to the pan along with the finely chopped parsley and coriander.
Season the mixture with salt and pepper and stir well to ensure the spices are evenly distributed.
Let the bean salad cool and serve it lukewarm or cold as a mezze.
Accompany the salad with fresh bread and enjoy it as a delicious starter or side dish.
