On Kitty's baking sheet, piles of nuts are piled high, crispy and shiny, as if secretly plotting who'll be nibbled first. As they cool, they stick together like best friends who just won't part. Kitty carefully breaks one off, takes a bite, and thinks: I just wanted to bake—now I'm negotiating with a nut cartel.
Ingredients
3 egg whites
250 g powdered sugar
2 tsp cinnamon
300 g ground hazelnuts
60 g whole hazelnuts
preparation
Put egg whites in a bowl and beat until stiff.
Slowly stir in the powdered sugar until a smooth mixture forms.
Fill 4 tablespoons of the mixture into a piping bag and set aside.
Fold the cinnamon and ground hazelnuts into the egg white mixture using a spatula.
Form walnut-sized balls with wet hands and place them on a baking tray lined with baking paper.
Use a wooden spoon handle to press a hole into the center of each cookie.
Fill the remaining egg white mixture into the holes of the cookies using a piping bag.
Place a hazelnut on the filling.
Bake the cookies in a preheated oven at 120°C for about 50 minutes until they are light brown.
Remove the finished cookies from the oven and let them cool.
