Parmesan onions with harissa

In Kitty's kitchen, onions sizzle, Parmesan clings to the top like a little rebel, and harissa bursts in as if someone had shouted, "Watch out, fire!" The aroma of spicy anarchy fills the air, and Kitty briefly wonders if this is still cooking or already a culinary experiment. A bite later, she's sweating slightly, grinning, and thinking: I just wanted onions—now I'm going to create a flavor explosion.
Ingredients
3 medium red onions
50 g grated Parmesan cheese
3 tbsp olive oil
Parsley, chopped
2 tbsp balsamic vinegar
Salt and pepper to taste
1 tsp harissa spice
preparation
Cut the onions into rings.
Grease an ovenproof dish with 2 tablespoons of olive oil.
Spread the grated Parmesan evenly over the bottom of the dish.
Distribute the onion rings evenly over the Parmesan.
In a small bowl, combine balsamic vinegar with the remaining olive oil, harissa spice, salt and pepper.
Brush the onion rings evenly with this spicy mixture.
Place the oven dish in the oven at 220°C top/bottom heat for about 15 minutes until the onions are golden brown and caramelized.
Allow the baked onions to cool slightly and then remove them from the pan.
Sprinkle fresh parsley generously over the baked onions.
