Pea Guacamole

 Pea guacamole in a glass bowl

Green, bold, surprising – the pea guacamole brings a new lease of life to Kitty's kitchen, as if shouting: "Avocado is yesterday's news." Creamy, spicy, with a hint of cheekiness, it lands on the table, ready for dipping. Kitty tastes it, grins, and thinks: who would have thought peas could be so rebellious?

Ingredients

  • 400 g peas

  • 1 small onion

  • 1 clove of garlic

  • 2 tomatoes

  • 1 chili pepper

  • 15 g coriander

  • 1 organic lime

  • 3 tbsp olive oil

  • 100 ml cold water


preparation

  1. Puree the peas with the water.

  2. Add salt and pepper.

  3. Peel the onion and garlic and dice finely.

  4. Finely dice the tomatoes and chili.

  5. Wash the coriander, shake it dry and chop it with the stems.

  6. Wash the lime with hot water, grate the peel and squeeze out the juice.

  7. Mix the pea puree with onion, garlic, tomatoes, chili and coriander.

  8. Stir in the lime zest and juice with the olive oil and season with pepper and salt.
