Radicchio - Endive Salad

A salad shot with salad

Radicchio and endive lie on Kitty's board, bitter and irritating, as if they were trying to make her life difficult. She tosses the dressing over them, tosses everything together, and suddenly the salad looks like someone just shredded autumn. Kitty tastes it, gives a quick shake, and thinks: I just wanted salad—now I'm going to do an advanced taste test here.

Ingredients

  • 1 radicchio

  • 1 endive head

  • 1/2 apple

  • 1 onion

  • 40 g olive oil

  • 40 g sunflower oil

  • 40 g herbal vinegar

  • 1 tbsp maple syrup

  • 1 tbsp balsamic cream

  • 1 tsp mustard

  • 1 tsp tomato paste

  • 1 clove of garlic

  • Salt & Pepper

preparation

  1. Cut both lettuces into thin slices.

  2. In a separate bowl, crush the garlic with a little salt.

  3. Add olive oil, sunflower oil, herb vinegar, maple syrup, balsamic crema, mustard and tomato paste.

  4. Finely grate the apple and onion.

  5. Mix all ingredients well.

  6. Season with salt and pepper.

  7. Pour the vinaigrette over the salad and mix well.
