Salad To Go

Kitty stands in the kitchen, Tupperware container in one hand, fork in the other, desperately trying to cobble together a salad to go that won't explode as soon as she closes the container. As the leaves jump out of the bowl and the tomatoes roll off the table, she mutters under her breath: Why do I even want to be healthy on the go? Finally, she crams everything in, pushes the lid on, hears a faint crack, and thinks: This is more like Salad Under Pressure—but hey, the important thing is that it's portable.
Ingredients
For the dressing:
6 tbsp olive oil
2 cloves garlic, crushed
1/2 tsp dried and shredded oregano
5 leaves of basil or parsley, finely chopped
1 red onion, finely chopped
1 tsp herbal vinegar
1 tsp maple syrup
salt and pepper
For the salad
A handful of peppers, cut into small cubes
A handful of cucumber, cut into small cubes
A handful of cherry tomatoes, halved long ago
A handful of chickpeas, drained
A handful of feta, cut into small cubes
Three handfuls of lettuce (e.g. lettuce, iceberg lettuce, lamb's lettuce, arugula...)
preparation
Mix all the ingredients for the dressing in a jar.
Layer the salad ingredients on top of the dressing in the jar.
Start with the chickpeas and end with the lettuce to keep the salad fresh and crisp.
Close the jar with a lid and take it with you, whether to the office, a picnic, a trip or even camping.
When you're ready to serve the salad, empty the contents of the jar onto a plate and enjoy it there.
