Stuffed avocado with feta and tomatoes

Kitty actually just wanted to spoon a boring avocado half, like always. But then feta and tomatoes suddenly jumped into the mix, spread out, and the avocado cheekily transformed into a little nest of deliciousness. Kitty looks at the colorful chaos, grins, and thinks: I didn't plan anything, but now it looks like I'm fancy.

Ingredients

  • 2 ripe avocados

  • Lemon juice for drizzling

  • Salt & pepper to taste

  • 1/2 red onion, finely diced

  • 1 beef tomato, diced

  • 1 mini cucumber, diced

  • 1 tablespoon balsamic vinegar

  • 2 tablespoons olive oil

  • 50 g feta, crumbled

  • 1 tablespoon chopped basil

  • Sesame seeds for the edge (optional)


preparation

  1. Halve the avocados and remove the pit.

  2. Carefully remove some of the flesh to make more room for the filling.

  3. Cut the removed avocado flesh into cubes.

  4. Drizzle the avocado flesh with lemon juice, salt and pepper and press the edges into sesame seeds.

  5. Finely dice the red onion, tomato and cucumber.

  6. Mix the diced tomato and cucumber flesh with the removed avocado flesh.

  7. In a bowl, mix the vegetables with balsamic vinegar, olive oil, salt and pepper.

  8. Spread the vegetable mixture over the prepared avocado halves.

  9. Crumble feta over the stuffed avocados.

  10. Sprinkle chopped basil over the stuffed avocados.
