Stuffed sweet potato with guacamole and roasted chickpeas

Kitty thought she'd make something healthy today: a stuffed sweet potato, easy, no stress. But as she scooped it out, half the potato flew across the table, the chickpeas bounced out of the pan like little golden bouncy balls, and the guacamole grinned creamily from the bowl, as if it knew it was about to stick everywhere. Kitty huffed, grinned, and thought: I just wanted a healthy meal—now I've built a gym out of chaos.
Ingredients
2 sweet potatoes
1 can of chickpeas
olive oil
1 tsp Curry Madras spice mix
1 tsp salt
For the guacamole
1 ripe avocado
2 tbsp olive oil
4 garlic cloves, finely chopped
4 cherry tomatoes, cut into small cubes
4 stalks of coriander, finely chopped
1 shallot, finely chopped
1/2 lime
1/2 teaspoon chili (to taste)
1/2 teaspoon salt (to taste)

Preheat oven to 180°C fan.
Wash sweet potatoes thoroughly and pierce them several times with a fork.
Place sweet potatoes on a baking sheet and bake for about 20 minutes.
Drain the chickpeas, rinse thoroughly and let them drain.
In a bowl, mix chickpeas with olive oil, curry Madras spice mix and salt.
After 20 minutes, add the marinated chickpeas to the baking tray with the sweet potatoes.
Bake for another 40 minutes until the sweet potatoes are tender and the chickpeas are crispy.
Meanwhile, mix the olive oil, shallots, garlic and coriander in a mortar and crush them.
Add avocado pulp and mash to a creamy consistency.
Add cherry tomatoes and lime juice.
Season with salt and chili and mix everything well.
Remove the baked sweet potatoes and crispy chickpeas from the oven.
Let the sweet potatoes cool slightly and cut them lengthwise to create an opening.
Fill the sweet potatoes with a generous portion of guacamole and top with the crispy chickpeas.
Garnish with additional coriander if desired.
Serve the stuffed sweet potatoes warm and enjoy.
