Thit Kho Tau

Hot Kho Tau bubbles in the pot, the caramel and fish sauce mingling in a riot of aromas, as if Vietnam itself were celebrating in Kitty's kitchen. The eggs shimmer golden, the meat is saturated with sweet and salty flavors, while Kitty stirs with shining eyes. She tastes, closes her eyes in delight, and thinks: I just wanted to cook – now I have a flavor explosion of wanderlust and soul food.

Ingredients

  • 1 kg pork belly

  • 10 eggs

  • 6 tbsp fish sauce

  • 6 tbsp soy sauce

  • 60 g sugar

  • 1.5 tbsp chicken broth powder

  • 2 onions

  • 2 cloves of garlic

  • Chili (optional)

  • 1.25 liters of water

  • Salt & Pepper

  • A little oil

preparation

  1. Cook eggs for about 10 minutes

  2. Let cool and peel

  3. Heat a pan with some oil

  4. Sear the pork belly on all sides

  5. Bring a pot with the water and the seared pork belly to a boil

  6. Add garlic

  7. Quarter onions with skin and add

  8. Cook for 20 minutes

  9. Remove pork belly

  10. Pour the broth through a sieve

  11. Cut pork belly into approx. 3 x 3 cm pieces

  12. Caramelize sugar in a pot

  13. Deglaze with a little water

  14. Add pork belly and mix briefly

  15. Add broth

  16. Add soy sauce, fish sauce, chicken stock powder and chili

  17. Season with salt and pepper

  18. Cook for 20 minutes

  19. Heat a pan with a little oil on medium heat

  20. Fry the eggs all over (the outside will be really crispy)

  21. Add to the meat in the pot and cook for another 10 minutes


Tip: Serve with rice.
