Hot Kho Tau bubbles in the pot, the caramel and fish sauce mingling in a riot of aromas, as if Vietnam itself were celebrating in Kitty's kitchen. The eggs shimmer golden, the meat is saturated with sweet and salty flavors, while Kitty stirs with shining eyes. She tastes, closes her eyes in delight, and thinks: I just wanted to cook – now I have a flavor explosion of wanderlust and soul food.
Ingredients
1 kg pork belly
10 eggs
6 tbsp fish sauce
6 tbsp soy sauce
60 g sugar
1.5 tbsp chicken broth powder
2 onions
2 cloves of garlic
Chili (optional)
1.25 liters of water
Salt & Pepper
A little oil
preparation
Cook eggs for about 10 minutes
Let cool and peel
Heat a pan with some oil
Sear the pork belly on all sides
Bring a pot with the water and the seared pork belly to a boil
Add garlic
Quarter onions with skin and add
Cook for 20 minutes
Remove pork belly
Pour the broth through a sieve
Cut pork belly into approx. 3 x 3 cm pieces
Caramelize sugar in a pot
Deglaze with a little water
Add pork belly and mix briefly
Add broth
Add soy sauce, fish sauce, chicken stock powder and chili
Season with salt and pepper
Cook for 20 minutes
Heat a pan with a little oil on medium heat
Fry the eggs all over (the outside will be really crispy)
Add to the meat in the pot and cook for another 10 minutes
Tip: Serve with rice.
