Zaalouk - Moroccan Eggplant Dip

Kitty puts the eggplants in the oven, intends to wait a moment, and in doing so, she's tidying up the kitchen, at least in her mind. When she turns around, there's a cutting board on the floor, a potholder is stuck somewhere in the drawer, and the kitchen timer is beeping way too loudly. Kitty takes a deep breath, grins, and thinks: I just wanted zaalouk—now I have an oven adventure with extra chaos.

Ingredients

  • 1 kg eggplants

  • 800 g tomatoes

  • 8 garlic cloves (thinly sliced)

  • 1/2 bunch of parsley

  • 1/2 bunch of coriander

  • 1 1/2 tsp salt

  • 3 tsp paprika powder

  • 1 tsp cumin

  • 6 tbsp olive oil (plus extra for drizzling)

  • 2 tbsp freshly squeezed lemon juice


preparation

  1. Preheat the oven to 220°C top heat/grill function.

  2. Halve the eggplants lengthwise.

  3. Make a cross-shaped cut in the inside of the eggplants.

  4. Insert the garlic slices into the cracks in the eggplants.

  5. Drizzle the eggplants with olive oil and place them on a baking sheet, inside out.

  6. Roast on the top rack of a preheated oven for 20-25 minutes, until tender and the skin darkens and wrinkles.

  7. Meanwhile, place the tomatoes in a bowl and pour boiling water over them.

  8. Let the tomatoes simmer for 3 minutes.

  9. Finely chop the herbs (parsley and coriander).

  10. Remove the tomatoes from the water, peel off the skin and halve the tomatoes.

  11. Remove the seeds with a spoon.

  12. Finely dice the tomato flesh.

  13. Heat 2 tablespoons of olive oil in a pan and add the diced tomatoes, herbs, salt, paprika powder and cumin to the pan and simmer over medium heat for 10 minutes, stirring occasionally.

  14. Remove the roasted eggplants from the oven and scrape the soft flesh from the skins with a spoon.

  15. Roughly crush the eggplant flesh and add it to the tomato sauce in the pan.

  16. Season with lemon juice and topped with extra herbs and olive oil, serve lukewarm or cold.
